This bright carrot ginger soup is super healthy with a flavorful kick. This vegan carrot ginger soup is an easy recipe of a comforting soup made with carrots and spiced with ginger. Ginger adds a lovely freshness and plays well with the carrots’ sweetness. Onion and garlic give it depth of flavor.
1 tablespoon olive oil
2 and 1/2 cups chopped carrots
1/2 cup chopped onion
1 garlic clove, minced
1 teaspoon grated ginger
1/2 teaspoon turmeric powder
1 and 1/2 cups vegetable broth
Salt to taste
1/4 teaspoon freshly ground pepper
Heat the olive oil in a pot over medium heat. Add the onion and carrots and cook until softened, for few minutes, stirring often. Stir in the garlic, ginger, turmeric powder, salt and remove from heat.
Add the slightly cooled carrots, and vegetable broth, salt and freshly ground pepper to a blender and puree until creamy and smooth.
Garnish with a drizzle of olive oil and freshly ground pepper. Serve and you may enjoy it with a slice of bread!
