Lassi is an Indian yogurt drink with thick and creamy texture. Lassis are good for health especially in hot months of summer.
There are different varieties of lassies. It can be either sweet or salty. A simple savory lassi generally has plain yogurt, water, spices and salt. This is generally the base of any savory lassi recipe.
In this recipe, I have added cucumber, coriander leaves, green chilli (optional), ginger and rock salt to the lassi. Cucumber has great health benefits.
It keeps you hydrated and flushes out the toxins, keeping you healthy from inside. Cucumber is made up of 95 per cent water and hence, it is super hydrating. It also helps to reduce the acidity and keeps your skin healthy and beautiful.
This recipe is also a great snacking option for people wanting to reduce weight.
The recipe is not vegan, it has yogurt but can definitely be made vegan by using non-dairy yogurt!
Chilled yogurt- 1 cup
Chopped cucumber – 1 cup
Green chilli- 1 (seeds removed)
Ginger – ¼ inch piece
Coriander leaves- ¼ cup
Rock Salt to taste
Water- 3/4 cup
½ tsp roasted cumin seeds powder
Few Ice cubes
Steps to make Cucumber Lassi
Add yogurt, water, cucumber, ginger, coriander leaves, cumin seeds powder, green chilli and salt in a blender and blend until completely smooth.
Serve immediately or refrigerate and drink in few hours.
