Inspiration for this lemon quinoa comes from, one of my favorite, lemon rice. Lemon Rice is a South Indian Rice recipe which is favorite among my family, friends.
Super delicious lemon quinoa recipe, which is made similar to lemon rice.
Quinoa Lemon is a quick, 20 minute lunch box recipe prepared with Quinoa and Lemon. To make it bit healthy here is a version with Quinoa. Lemon quinoa is great for dinner too. It is very nutritious and super healthy for you.
Quinoa is gluten-free, high in protein and one of the few plant foods that contain sufficient amounts of all nine essential amino acids. It is also high in fiber, magnesium, B vitamins, iron, potassium, calcium, phosphorus, vitamin E and various beneficial antioxidants.
Fresh Lemon juice makes it slightly tangy which further enhances its taste and gives it a distinctive flavor.
Quinoa – 1 cup
Water – 2 cups
Oil – 2 tsp
Mustard Seeds – 1 tsp
Urad dal (split black gram) – 1 tsp
Asafetida – a pinch
Cumin Seeds – ½ tsp
2 tablespoon peanuts
Black Pepper – 1 tsp
Chillies – 2
1 medium onion, finely chopped
1 tbsp coriander leaves finely chopped
Curry leaves a sprig
Turmeric powder – 1/2 tsp
Lemon Juice – from 1 lemon
Salt to taste
Cook quinoa in 2 cups of water. Fluff it and set aside to cool.
In a non stick pan or kadhai, add oil once it’s hot, add in the peanuts and fry them until they turn slight golden brown. Take out and keep them aside.
In the same kadai add mustard seeds, cumin seeds, urad dal , saute till the dal turns light brown in color. Then add chilles, curry leaves, asafetida and saute for few seconds.
Next add in the chopped onions, turmeric, black pepper and saute till onions turn light brown in color.
Add cooked quinoa and mix well.
Turn off the flame and add salt, juice of lemon and mix everything well.
Garnish with Coriander leaves and roasted peanuts and serve hot with papad or pickle
