Ingredients of peanut chutney
1/2 teaspoon oil
3/4 cup Peanuts
Handful Curry leaves
1 Green Chilli
Salt to taste
1 teaspoon oil
1/2 teaspoon Mustard seeds
pinch of asafetida
1/4 teaspoon Urad dal (split black gram)
1 sprig Curry leaves
1 – 2 chilies (dry, Red)
How to make peanut chutney
In a pan, heat oil and add peanuts. Roast for two to three minutes on a low flame.
To this, add curry leaves and the green chili. Stir this for a minute and switch off the flame.
Once cool, grind it together with salt and some water to a paste.
To temper the chutney, heat oil in a small skillet or pan and add asafetida, mustard seeds, urad dal, curry leaves and the red chilies. Switch off the flame once the mustard and urad dal start spluttering. Pour this over the chutney and mix it properly.
Pour the finished spread into air tight glass container and store in a cool, dry place. This chutney lasts for 5-7 days when stored in an airtight container in the refrigerator.
