These simple, fluffy vegan quinoa flour pancakes are gluten-free, sugar-free and easy to make with just a few ingredients. They’ve got the perfect texture and are high protein too. This one is perfect option for breakfast.
1 cup quinoa flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 1/4 cup coconut milk (or milk of choice)
2 tablespoons maple syrup
1 tablespoon oil
1 tablespoon lemon juice
Instructions to make quinoa pancakes
In a mixing bowl, combine quinoa flour, baking powder and baking soda.
In a separate bowl, whisk together the coconut milk and maple syrup. Finally, whisk in lemon juice as it’s essential in making the pancakes rise.
Pour the wet ingredients into the dry and stir to combine properly.
Set the batter aside for 10 minutes.
Preheat a pan over medium-low heat. Use a little cooking spray to grease it.
Pour out 1/3 cup of batter for each pancake and spread into a circle.
Cook each pancake for about 2 minutes on one side, then flip. Cook for another 2 minutes on the other side, until nicely browned.
Serve the pancakes immediately with your favorite toppings. Serve pancakes with syrup, whipped cream, nuts, berries or any other toppings.
