Spinach raita is a simple accompaniment to almost any Indian meal. Spinach raita is a refreshing and flavorful yogurt-based dish made with spiced spinach and curd. You can serve spinach raita with pulao, rice, biryani and dal roti.
Spinach is also an excellent source of vitamin K, vitamin A, vitamin C and folate as well as being a good source of manganese, magnesium, iron and vitamin B2. Vitamin K is important for maintaining bone health and it is difficult to find vegetables richer in vitamin K than spinach. Whereas, Yogurt is rich in protein, calcium, vitamins, and probiotics, which can enhance the gut microbiota. These can offer protection for bones and teeth and help prevent digestive problems. Low-fat yogurt can be a useful source of protein on a weight-loss diet.
This raita can be prepared a couple of times every week for your dose of good nutrition.

2 cups plain yogurt
1 and 1/2 cups Spinach, Chopped
1 teaspoon garlic, minced
1/2 teaspoon ginger, minced
½ tsp – green chillies, chopped
1 teaspoon roasted cumin powder
1 teaspoon mustard seeds
Pinch of red chili powder
Black salt, as required
Whisk fresh curd until smooth and keep aside.
Heat the oil in a pan.
Once the oil is hot, add mustard seeds and let them crackle for a few seconds.
Add garlic, ginger, spinach and green chilli in the pan and cover and cook for 5-6 minutes until spinach is softened.
Remove the pan from heat and let the spinach cool.
Add cooked spinach, cumin powder, and black salt, red chilli powder in the whisked curd and mix well.
