This Asafetida roasted pumpkin is absolutely delicious and easy to prepare recipe. It is nutritious, healthy and can be enjoyed by both adults and kids. Marinated and baked, pumpkin pieces are served with a delicious yogurt dressing.
Ingredients of Hing Roasted Pumpkin
500 Gram pumpkin
Marinade for pumpkin
2 tbsp Olive oil
1/2 tsp Smoked paprika
1/2 tsp honey
Salt as per taste
1/3 tsp Cinnamon powder
1/2 tsp black pepper powder
A pinch of Asafetida
For the yogurt dressing:
1/2 cup yogurt
1 to 2 teaspoons lemon juice
Sea salt to taste
Chopped coriander leaves
Optional: dash of black pepper (to taste)
How to Make Heeng Roasted Pumpkin
Cut the pumpkin in cubes
For marinating, Blend all the ingredients in a mixer grinder
In a baking tray, place the wedges of pumpkin and pour the marinade all over and massage the pumpkin.
Bake for 30 min at 180 °C.
To prepare the yoghurt dressing you have to –
Combine the yogurt and the lemon juice in a small bowl and whisk together until completely smooth
Season a whole pod of garlic with a pinch of salt and olive oil. Wrap in foil and bake for 30 minutes at 180°C.
Peel and mince the garlic. Add to the bowl and whisk to combine with the lemony yogurt.
Add salt to taste. Add pepper, if you like.
Pour the dressing over the Asafetida roasted Pumpkin.
