Cabbage kheer is a healthy indian dessert recipe using cabbage, milk and nuts, which is high in dietary fibre, to make a delicious and nutritious kheer. Nuts add a rich taste, nutrition and a great texture to the kheer. Sweet and thickened milk dessert recipe, which is a perfect option for any occasion.
I have used jaggery instead of refined sugar in this recipe as sweetener. As jaggery is one of the healthier options as a sweetener. You can also use stevia or any other sweetener.
I have used milk in this recipe. To make it vegan, you can replace the milk with coconut milk or cashew milk and instead of condensed milk, you can also use the mixture of 2 tbsp corn-starch and 2 cups of water.
Ingredients
2 cups shredded cabbage
1 can condensed milk
4 cups milk
½ cup jaggery
2 bay leaves
A pinch of saffron
1 tsp cardamom powder
1 tbsp ghee
Almonds, Cashew nuts, pistachios – chopped
Raisins

Steps to make cabbage kheer recipe
Step 1
Boil 2 cups of water in a pan and add shredded cabbage to it. Let it cook on a medium flame for 10-15 minutes. Turn off the flame, drain the cabbage completely
Step 2
Now, heat ghee in a big heavy bottomed pot and add bay leaves and put in the drained cabbage. Fry for 5 minutes on a low flame.
Step 3
Keeping the flame low, add milk and condensed milk and cook this mixture for about 30 minutes until the milk reduces to almost half its quantity, stirring frequently.
Step 4
Add jaggery and keep stirring for another 10-15 minutes. Add in nuts, raisins, cardamom powder and saffron and turn off the flame.
Step 5
Keep in the refrigerator to chill.
Step 6
Serve chilled, garnishing with more nuts on top if required.

Note: Alsways use a heavy bottomed pan for the preparation else you may end up burning the milk.
