These vegan chickpea and quinoa nuggets recipe are made with no sugar, no gluten, no dairy, no eggs, no oil/butter, and are all natural and healthy! Crusted with crispy quinoa – packs a delicious crunch which surrounds a soft and flavorful inside.
Crispy, golden nugget recipe is a perfect option for protein rich snack, which kids and adults will both love to eat.
1 15 ounce can chickpeas, drained
1/2 cup quinoa, cooked
1 tbsp rolled oats
1 tbsp nutritional yeast
1 tsp onion powder
1 tsp Italian seasoning
½ tsp black pepper powder
1/2 tsp green chillies, finely chopped
1/2 tsp garlic powder
Salt as required

Preheat oven to 425ºF and line a baking tray with parchment paper
Place your rolled oats in the food processor and pulse into a powder.
Add the chickpeas to the food processor and blend until it forms a smooth consistency. Add black pepper powder, chopped green chillies, Italian seasoning, nutritional yeast, garlic, onion, and salt in it.
Place 1/2 cup of cooked quinoa in a small bowl. Using your hands, form the chickpea mixture into small patties, coat them in the quinoa until covered completely, and place them on the lined baking tray.
Make sure to form the chickpea mixture into small patties.
Once all patties are coated, place on the baking sheet and place in the oven for 20 minutes.
Serve it hot with tomato sauce or you can also enjoy it with green coriander chutney!
Note: you can also use bread crumbs instead of quinoa for coating your nuggets.
