Egg muffins are full of taste and a great source of protein and nutrition to fuel you for the day! If you are looking for an easy breakfast that packs a powerful punch of taste, this is your recipe!
Everything tastes better when you add cheese! I love using cheese in my recipes to add extra flavour and loads of ooey gooeyness!
1/2 tsp ground cumin
1/4 tsp cayenne pepper
Sea salt & pepper to taste
Grated cheese – ¼ cup
¼ cup chopped cilantro leaves
1 cup of corn, fresh or frozen
1 tomato, diced
1 jalapeno, sliced
Out of these ingredients, you can make 12 muffins. If you want, you can also add spinach, seeds, avocado for better nutrition.
Preheat the oven to 375 F Degrees. Spray your muffin tin with cooking spray and set aside.
In a medium bowl whisk the eggs, salt, black pepper, cumin and cayenne pepper, corn, cilantro, grated cheese, red chilli flakes, oregano, tomato and jalapeno. Mix well to combine.
Ladle egg mixture into muffin tin until almost full and put grated cheese on top.
Bake for about 18-20 minutes or until the eggs are set.
Garnish with fresh chopped cilantro
