Everyone loves to dip and enjoy crispy, seasoned fries. But those fries don’t always have to be of the potato variety! Carrots make fabulous fries. Tossed in a little olive oil, Parmesan cheese and just the right seasoning, carrots bake up to be slightly sweet, crisp delights! These crunchy cheesy Carrot Fries are easy to make, baked-not-fried and make great lunch, side dish or appetizer! A great alternative to potato fries!
1 tablespoon olive oil
¼ cup parmesan cheese
1 tablespoon garlic powder
1 teaspoon pepper
¼ cup fresh parsley, chopped
½ teaspoon salt
Preheat oven to 400°F.
Slice the top and bottom off of carrots then slice them in half. Slice the carrots into long thin pieces – about the size of a French fry
Gently toss the carrot in the oil, salt and pepper, sprinkle on the cheese and mix to coat before spreading them in a baking sheet.
Spread on a baking sheet.
Bake for 15-20 minutes until crispy
Serve carrot fries with dipping sauce, topped with Parmesan and parsley.
