This chickpea omelette is vegan, gluten-free, healthy, and of course egg-free, yet tastes surprisingly delicious similar to egg omelette! They are a delicious high protein breakfast that will keep you full all morning.
They are very easy to make and you can add any of your favourite ingredients like mushrooms, bell peppers, spinach, or onions, to make the recipe even more nutritious.
This omlette is made with chickpea flour. Unlike all-purpose flour, chickpea flour is high in protein, fibre and micronutrients, while being low in carbohydrates and calories. Half a cup of chickpea flour contains an impressive 11 grams of protein, 5 grams of fibre, and nutrients like folate, iron, magnesium and zinc. Chickpea flour is also heart-healthy. 1/4 cup chickpea flour
1/3 cup water
1 Tablespoon flaxseed meal or chia seed meal
1 tbsp nutritional yeast (optional)
1/4 tsp black salt
¼ tsp, each of garlic powder, cumin powder and turmeric powder
1/4 cup vegetables of choice, chopped finely
½ tsp chopped green chillies
1 tbsp oil for frying
Instructions To make chickpea omlette
Mix chickpea flour, nutritional yeast, salt and water and stir until there are no lumps.
Add 1 tsp oil to a frying pan and saute the chopped veggies on medium-low flame for about 3-5 minutes until they become tender.
Remove the veggies and add them to the batter. Then, add chopped cilantro and green chillies, ground flaxseed, turmeric powder, cumin powder, garlic powder into the batter and give the batter another stir.
Turn up the heat to medium and pour the batter in the skillet and cook for about 5 minutes until the top of the omelette no longer looks wet.
Carefully loosen up the omelette with a spatula and flip the omelette to the other side and cook for 3-5 more minutes until it is no longer soft in the middle.
Serve hot and enjoy it with ketchup or with green chutney and salad.
(Notes : Chickpea omelettes tend to stick to the pan, so be sure to grease the pan with oil properly. Allow the omelette to cook until it becomes solid, and loosen it from the bottom of the pan before flipping.)
