2 Beetroots, chopped
2 cups yoghurt
2 cups Water
¼ tsp black pepper
1 inch Ginger, finely chopped
1/4 teaspoon Chaat Masala Powder
Salt, to taste
1/2 teaspoon Mustard seeds
1 teaspoon Cooking oil
How to make Beetroot Buttermilk Recipe
Put the beetroot in a pressure cooker and half a cup of water and boil on medium heat for two whistles. Once done, allow it to cool.
Once the beetroot is cooled, blend it in a blender along with ginger, and 1 sprig of curry leaves.
Strain the pureed beetroot mixture through a strainer.
In another big bowl whisk the yoghurt and then add salt, chaat masala, pureed beetroot mixture and water.
Heat oil in a pan, add mustard seeds and curry leaves and allow it to crackle.
Once it crackles, turn off heat. Add it to the beetroot buttermilk and mix.
Once done, refrigerate it for a few hours, garnish with mint leaves and serve chilled.
