Turmeric Coconut rice is a healthy and flavored rice recipe prepared with brown rice, coconut milk and turmeric. It is an ideal one pot meal or lunch box recipe which can also be served for breakfast and dinner.
The recipe is very healthy due to its ingredients. The health benefits of brown rice are largely due to it being a whole grain. The fiber in brown rice helps in lowering cholesterol, moves waste through the digestive tract, promotes fullness. Brown rice is considered as a low glycemic index food.

Ingredients for Turmeric Coconut Rice
- 2 cups brown rice, washed and drained
- 1 tablespoon coconut oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon turmeric powder
- 2 green onions, chopped
- 2 sprigs of thyme
- 1 carrot, diced
- 300 ml coconut milk
- Vegetable broth or water
- 1/4 teaspoon Cayenne pepper
- Sea salt, to taste
- 1/4 cup chopped cilantro, for garnish
Heat oil in a pan, add onion and garlic and cook until soft for about 3 minutes.
Stir in turmeric, green onions, thyme, carrots and cook for a minute stirring constantly.
Add rice and stir until rice is fully coated yellow. Add coconut milk, vegetable broth, cayenne pepper, and salt.
Bring to boil, cover and reduce to simmer on low until rice is tender. Remove from heat and keep covered for about 10 minutes.
Add chopped cilantro leaves on the top for garnishing.
Serve hot and enjoy it with Healthy Snakegourd Raita
