This simple corn salad is healthy, creamy, spicy, salty and citrusy; it’s the perfect light side for all that heavy summer potluck food. It is healthy, yet delicious. This mouth-watering salad can be enjoyed by the people of all ages. This easy to prepare dish, which can also be enjoyed as snacks, is loaded with vital nutrients, vitamins, minerals, antioxidants.
4 cups corn (about 5 ears), cut from the cob
1 tbsp olive oil
1/2 red bell pepper, chopped
1/2 small onion, finely chopped
1/2 cup fresh cilantro, chopped
6 green onions, chopped
1 jalapeno pepper, diced
1/2 avocado chopped
4 tbsp lime juice
1/2 tsp roasted cumin seeds powder
1/2 tsp smoked paprika
1/4 tsp black pepper powder
1/4 tsp salt
2 tbsp sour cream (or yogurt)
2 tbsp mayonnaise
1/2 cup cotija cheese (or feta), crumbled
1/2 cup roasted peanuts
Instructions to make Corn Salad
Using a sharp knife, carefully Cut the corn off the cob. You can also use canned corn or frozen corn.
Add about water to a medium saucepan and salt. Bring to a simmer. Add corn, cover, and cook until corn is tender, 3 minutes. Drain and pat dry.
Heat the olive oil in a skillet. Add the corn and stir it for few minutes.
Transfer the corn to a large bowl and let it cool for a couple of minutes.
To the same bowl, add the remaining ingredients. Stir everything together until well combined. Adjust lime juice and salt and pepper as necessary.
Garnish with additional cheese and cilantro and serve.
