Curd Rice or yoghurt rice is a simple recipe made in South Indian household and is loved by all. You can make this rice recipe for your family and friends.
This rice is loaded with probiotic properties, because yogurt or curd is a great probiotic. These good and beneficial bacteria are known to improve gut activity, soothe inflamed digestive systems and treat an upset stomach. Curd or yoghur has a number of health and nutritional benefits, and eating curd every day helps your system stay cool, improves your digestive system, and helps to get rid of stomach problems. Proteins in yoghurt along with nutrients like potassium and magnesium help in lowering high blood pressure and promoting a healthy heart. Yoghurt is also a great source of calcium. Ingredients of Curd Rice
1 and ½ cup yoghurt (curd)
Salt to taste
1 tbsp olive oil
2 red chilli
1 pinch asafoetida
2 tablespoon soaked urad dal
2 ½ cup boiled rice
3 tbsp chopped coriander leaves
1 teaspoon mustard seeds
1/2 teaspoon grated ginger
2 tablespoon soaked chana dal
6-7 curry leaves
How to make Curd Rice
For tempering, heat oil in a pan, when it becomes hot, add mustard seeds and let it crackle. Add dry red chilli, grated ginger, soaked bengal gram, split black lentils, curry leaves, pinch of asafoetida and saute them on medium flame till both the lentils become light brown in colour.
Take a bowl and put fresh yoghurt and salt in it. Whisk the yoghurt to make it smooth and creamy.
Add the boiled and cooked rice, freshly chopped coriander leaves, and pour the tempering on the yoghurt and mix until well combined. Adjust salt, if needed.
Transfer the curd rice in a bowl and garnish with curry leaves, dry red chilli, pomegranetes, nuts and serve chill,
