Ingredients for Broccoli Soup
4 cups broccoli florets
1 small onion, finely chopped
1 medium potato, diced
Kosher salt, as required
Freshly ground black pepper
2 cups vegetable broth
1/4 teaspoon freshly grated nutmeg
1 cup grated cheddar cheese
1 tablespoon olive oil
3 cloves garlic, sliced
2 stalks celery sliced
1 cup coconut milk
In a pot, heat the oil over medium heat.
Add the onion, and cook for few minutes, until translucent. Add the garlic and cook for 1 minute.
Add the celery, broccoli, potato, salt, pepper, nutmeg powder and vegetable broth. Cover and simmer for 15-20 minutes, or until the vegetable is soft and properly cooked.
Add the milk, and then blend with an immersion blender until creamy and smooth.
Add the cheese in batches, stirring each time until it has melted into the soup.
