What Is Black Garlic?
Black garlic is produced when the fresh white garlic is fermented at a high temperature in a humidity-controlled environment. Its black color results from the fermentation process. The garlic turns black and becomes more acidic, sweeter and chewy. Compared to its fresh counterpart, it is lower in allicin, the sulfur compound that gives garlic its pungent odor.
