Sweet potato chocolate pudding is dairy free, gluten free and vegan friendly dessert recipe. This healthier pudding recipe with the goodness of sweet potato is a delicious real food dessert that is super easy to prepare!
Sweet potatoes are a rich source of fibre as well as containing an array of vitamins and minerals including iron, calcium, selenium, and they’re a good source of B vitamins and vitamin C. One of the key nutritional benefits of sweet potato is that they’re high in an antioxidant known as beta-carotene, which converts to vitamin A once consumed.
Sweet potatoes – 450 g
1 cup plant milk of your choice (250 ml)
1/2 cup unsweetened cocoa powder (40 g)
2 tbsp maple syrup
4 Medjool dates
Wash, peel and chop the sweet potatoes. Steam them for about 25 minutes or until they’re soft.
When they’re cold, place them in a blender with the rest of the ingredients and blend until smooth.
Pour the pudding into serving bowl, and place in the fridge to set until thoroughly chilled, for atleast 1 hour. Once chilled, the pudding will miraculously become thick and creamy.
You can garnish it with fresh fruits, chopped nuts, pistachios and cacao nibs on top.
