For Seasoning
1 teaspoon of onion powder
1 teaspoon of garlic powder
Salt to taste
1 teaspoon of smoked paprika
1 teaspoon of fresh lemon juice
1/2 teaspoon of ground black pepper
Instructions
Slice your cucumbers thin using a mandolin. If you don’t have a mandolin, then slice cucumbers as thinly as possible.
Pat cucumbers dry and add them to a bowl. Mix well with your seasonings.
Preheat the oven to 225°F. Line a baking sheet with parchment paper. Place the cucumbers onto the baking sheet, lying flat and separated.
Bake the cucumber chips until they are brown and crispy—a total time of about 1½ to 2 hours. You will know they are done because when you lift the cucumber slices from the baking sheet, they should not bend and will look completely dried out.
Remove the cucumbers from the oven once they are dried out and crispy.
Enjoy your healthy snack with a cup of tea or coffee or with Beetroot Hummus or Healthy Snakegourd Raita.
