Vegan cauliflower rice is the healthier alternative of the classic Asian dish. In this recipe, I have used cauliflower instead of rice. This cauliflower fried rice is for those of you are trying to limit carbs intake or just want a healthy recipe that also tastes amazing. This healthy vegan cauliflower fried rice is so good, so easy, and so healthy, so filling! Cauliflower rice can be freely consumed by diabetics, as cauliflower has low glycemic index (G.I), low in calories, carbs and fat.
Many people don’t like cauliflower, but once you learn how to make it, you will fall in love with this awesome veggie. This easy dish can be prepared in about 15 minutes. To add more protein to this dish, you can add chickpeas, edamame, tofu.
I have used tofu in this recipe to boost up the nutritional profile of this recipe. Tofu is a good source of protein and contains all nine essential amino acids. It is also a valuable plant source of iron and calcium and the minerals manganese, selenium and phosphorous. In addition, tofu is a good source of magnesium, copper, zinc and vitamin B1.
I have also used sesame oil in this recipe. As we all know that, sesame oil is very healthy than any other regular oil. Sesame oil is one of those oils that are good for you. First, it is rich in mono- and polyunsaturated acids, the good kind of fat that cuts cholesterol. Second, sesame oil is low in saturated fats — the kind of fat that’s bad for you.
How to make cauliflower rice?
Take a medium sized cauliflower and wash the head of cauliflower, then chop into large chunks. Add the chunks to a food processor and pulse a few times until it forms a rice consistency. The riced cauliflower can be stored in the fridge and you can use it in various recipes.
How to bake Tofu?
Preheat the oven at 180 degree C. Then, toss the tofu, 1 teaspoon olive oil, 1 teaspoon soy sauce, and cornstarch together. Arrange on a baking sheet lined with parchment paper. Bake for 10 minutes.
Ingredients of Vegan Cauliflower Rice
1 tsp sesame oil
½ tsp Grated ginger
3 cloves garlic, finely chopped
1 cup carrots, peeled and diced
1/2 tsp red pepper flakes, to taste
4 green onions, diced
1 cup frozen green peas
1 cup frozen corn
3 tbsp soy sauce
salt and pepper, to taste
Bring the sesame oil to medium-high heat in a wok or large pan.
Add the garlic and stir for a minute or two.
Add the carrots and continue cooking for 3 minutes or so until they start to soften.
Add the red pepper flakes, riced cauliflower, tofu, green onion, peas, corn and soy sauce.
Cook for about 10 minutes until the cauliflower is tender, stir often.
