These carrot cake energy balls make a healthy snack that tastes just like carrot cake! You will love these bites which are really easy to make. It is deliciously guiltfree, vegan, healthy, gluten-free and loaded with vitamins, minerals, antioxidants, fiber.
In this recipe, it’s better to use mejdool dates, which tend to be stickier than the regular dates. If you would like to use regular dates to make this recipe and your dates feel a bit dry, then I would recommend you to soak them in hot water for 5 minutes, drain the water and then proceed with the recipe. This will add some moisture into the dates and help all the ingredients bind together! Dates not only give sweetness but also provide loads of nutrients in this recipe.
If you don’t like walnuts, you can use any other nuts. You can also even use oats, dried fruits, chocolate chips, and cocoa powder, whatever you like actually.

Ingredients
1⁄2 cup grated carrots
1⁄2 cup unsweetened shredded coconut
2 Tbs. almond butter
1 1/2 cups medjool dates
3/4 cup walnuts
1 tbsp chia seeds
1 tsp cinnamon
1/4 tsp nutmeg
Pinch of sea salt
1 tsp vanilla extract
Extra 1/2 cup shredded coconut for rolling
Instructions
Step 1
Add all the ingredients to a food processor and pulse until combined.
Step 2
Scoop out some dough using a spoon and roll into balls with your greased hands.
Step 3
Roll each ball into the shredded coconut to coat.
Step 4
Place in the fridge for at least one hour
