Tofu scrambled with onion, tomato, cilantro and cumin for a delicious Eggless Bhurji Scramble Breakfast.
Tofu is a good source of protein and contains all nine essential amino acids. It is also a valuable plant source of iron and calcium and the minerals manganese, selenium and phosphorous. In addition, tofu is a good source of magnesium, copper, zinc and vitamin B1.

Ingredients for scrambled Tofu Recipe
1/2 tsp oil
1/2 onion, finely chopped
1 clove garlic, minced
1 green chilli
1/2 teaspoon cumin powder and coriander powder
Chopped Broccoli, carrot, bell pepper
1/2 tsp turmeric
1/4 tsp black pepper
1 medium tomato, finely chopped
Salt (as per taste
Tofu, crumbled evenly
1) Heat oil in a skillet over medium heat. Add onion and cook for few minutes or until starting to get golden. Add garlic and chilli and a pinch of salt and cook for another 2 minutes until golden.
2) Add turmeric, cumin, black pepper and mix in. Add tomatoes and 1/4 tsp salt and mix in, cook for a minute to soften.
3) Add in other veggies such as peppers, broccoli, and carrots and cook it properly
4) Add cilantro, crumbled tofu and 1/4 tsp salt and mix well. Cover and cook for 2 minutes (longer for dryer). Taste and adjust. Mix in for a few seconds and take off heat. You can enjoy this recipe with paratha, bread or chilla.
