1. Apple Cinnamon Oatmeal
First, you saute apples with a little bit of coconut oil. Now, you add in the oatmeal, almond milk, cinnamon and nutmeg powder, nut, chia seeds, and a drizzle of maple syrup. You cook that mixture over medium-high heat for 7-10 minutes while constantly stirring it.
2. Apple Cinnamon Crepes
These delicious apple cinnamon crepes are vegan, gluten-free and easy to make. They can be made for breakfast or dessert.
Apple Filling
The filling consists of sweet apples, cinnamon, coconut sugar, lemon juice and a little bit of cornstarch. You could also add raisins, and vanilla extract if you like. You simply need to chop the apples, add all ingredients to a pan or skillet and let it simmer for a few minutes.

Dry ingredients
1 cup oat flour, 1/2 cup whole wheat flour
4 tbsp cornstarch or tapioca flour
2 tbsp coconut sugar, 1 tsp baking powder
1 tbsp ground flax seeds or chia seeds
Wet ingredients
1 1/2 cups almond milk or coconut milk
1 small banana
1 tbsp lemon juice
1/2 tsp vanilla extract
oil for frying
Apple Filling
3 apples, peeled, cored and chopped
3 tbsp coconut sugar
2 tbsp almond or coconut milk
1/2 tbsp lemon juice
1/2 tsp cornstarch
1 tsp cinnamon powder
Instructions
To make the crepes simply put all dry ingredients into a bowl and stir with a whisk.
Process all wet ingredients (except the oil) in a blender.
Pour the wet ingredients into the bowl of dry ingredients and stir with a whisk to combine.
Let the batter rest for 5 minutes.
Heat a griddle and brush with oil. Pour a small ladle of batter onto the griddle.
Cook the crepes covered at a medium to low temperature for about 2-4 minutes, until you can easily lift a side of the crepe. After you flipped them, and cook for another 1-2 minutes.
To make the apple filling, put all ingredients in a skillet, stir and let simmer for a few minutes over low/medium heat.
Add a few tsp of filling on each crepe, roll it up and serve.
3. Cinnamon Baked Apples
Easy cinnamon baked apples, made with just 5 ingredients and naturally sweetened. They’re low in fat, loaded with vitamins, minerals, antioxidants, so healthy and a super delicious dessert with the goodness of apples!
Ingredients
3 medium red apples
2 tbsp maple syrup
2 tbsp cornstarch or tapioca starch
1 tbsp lemon juice
1/2–1 tsp ground cinnamon
Instructions
Preheat the oven to 180 degree C
Peel and dice the apples.
Add the apples and the rest of the ingredients to a large mixing bowl and mix until well combined.
Add to a baking dish and bake for 45 minutes covered with foil. Remove foil and bake for another 15 minutes.
Serve immediately with some vegan vanila ice cream or coconut whipped cream (optional).
4. Apple Pie Energy Balls
Apple Pie Energy Balls are a delicious and healthy vegan and gluten-free snack made without any added sugar. It is made with just a few ingredients and a food processor. Perfect to satisfy your sugar pangs! These energy balls are a perfect healthy snack, because they are made with fresh apples.
Ingredients
4 dates
10 prunes, pitted
1 cup walnuts
1 teaspoon cinnamon powder
3/4 cup rolled oats
1 Apple
Instructions
Roughly chop the dates and add them to the food processor.
Add the prunes, walnuts, cinnamon, and 1/2 cup rolled oats.
Pulse the food processor for about 1-2 minutes until everything is very finely chopped.
Core the apple (no need to peel it) and grate into the mixture.
Pulse the food processor a few times to mix in the apple.
Mix in the rest (1/4 cup) of the rolled oats .This is done to add a bit more texture to the Apple Pie Energy balls.
Cover the mixture and chill in the fridge for about 30-40 minutes.so that it will harden slightly. This will make it easier to roll it into balls. Once chilled, roll it into balls with your greased hands.
You can store in the refrigerator in an airtight container for about 4-5 days.
