Green bananas have high resistant starch, which is often not digested and cause bloating and gas. However, the bananas lose their starch content as they ripen. The starch starts converting into simple sugars as they start ripening.
Unripe green bananas are rich in pectin. Therefore, it is rich in dietary fibre. Pectin breaks down when the banana is over-ripe.

It also helps in the production of short-chain fatty acids which is really good for your digestive health.
Unripe bananas have low antioxidant levels, but these increases with the age of the banana. Yellow bananas have high antioxidant properties as compared to the green one.
